Composition & Quality

The composition of honey in mainly attributed on which flowers are visited by the honeybees when collecting nectar. The main simple sugars are glucose and fructose of roughly equal proportions. The worker bee converts nectar to honey from two enzymes produced in the pharyngeal gland. Honey is an acid product with a low pH, which is antibacterial.

History

Honeybees have been documented since the dawn of human history. According to the ancient Greek mythology the god Aristaeus, son of Apollo, is often credited as the first beekeeper. Having learned from Mother Earth Gaia.

Edmund Southerne is thought to be the author of the first original beekeeping manual written in English. The book was published in 1593.

It was not until the invention of the microscope that Jan Swammerdam was to finally prove that the "king" bee was in fact female. His findings and illustrations in The Book of Nature (1759) describe the anatomical differences of queen, worker, and male larvae.
